When a steak’s cooked rare, it means it was only cooked for a short duration and the color of the meat is still red, while the center remains cool. Basically, only the outside is cooked. Experts say eating raw beef from reputable sources is generally safe as they don’t contain parasites that are found in pork and chicken.

Medium Rare

Steaks prepared medium rare are warm with a pink middle. The meat is firm on the outside but juicy and soft on the inside.


Medium steaks have a brownish gray center and a band of pink in the middle.

Medium Well

A steak that’s cooked medium well only has a hint of pale pink, but for the most part it’s color is grayish brown. If you want steak that’s still juice but no red stuff oozing out, this is the one for you.


Well-done steaks are cooked on slow heat with a charred exterior. The inside is gray-brown with no trace of pink.

How to Cook Steak

You’ve probably read that cooking meat until it’s well-done means there’s more possible carcinogens in it. Researchers have conducted lab tests showing that the higher number of heterocyclic amines puts an individual at higher risk of developing polyps in the colon and even cancerous tumors.

It’s also important to note that eating of red meat increases one’s risk of developing colorectal cancer, coronary heart disease and type II diabetes. If possible, consume no more than 18 ounces of red meat each week, preferably cuts that are low in fat like tenderloin and sirloin.

To cook steak correctly, follow these steps:

  • First, remove the steaks from the fridge and let it sit at room temp for about an hour.
  • Then season well with salt and pepper. You may also rub each side with olive oil.
  • Preheat oven to 375F.
  • Preheat your iron skillet on your stove top on high heat until it’s very hot.
  • Sear your steaks in the skillet for about 2 minutes per side. You may add an extra minute if the steak is thick (or large).
  • If the steak has a side of fat, render the fat by turning the steak onto its side and sear for 2 minutes.
  • Then place the skillet into the oven until the temp reaches about 130-140F (medium rare).
  • As the steaks are still cooking, combine garlic and butter in a small bowl using a fork.
  • Then once the steaks are taken out of the oven, place about a tablespoon of the garlic butter mixture on top of each.
  • Let the steaks rest for 5-10 minutes.
